we successfully fixed the issue on our own, the Xamarin iOS binding Library provided by Wikitude is not up to date with a recent change in Xamarin.iOS (https://docs.microsoft.com/en-us/xamarin/ios/internals/registrar)
We started by downloading the Wikitude iOS Javascript SDK. Then we use Objective Sharpie with the WikitudeSDK.framework file to generate C# classes. Then we created a Xamarin.iOS binding library project. With a few adjustments and adding AutoGeneratedName = true to the [Model] attributes it is now working.
We had this issue with both Wikitude 8.0.0 Xamarin and 7.2.1 Xamarin.

Thx for the link! We're about to rewrite the Wikitude SDK Xamarin binding to deliver a better/initial NuGet package. I added the link as a reference to consider it when we rewrite the package.
